I started in 1991 in New Zealand as a young chef at the Auckland Opera House. I then went on to Australia to work in various trendy restaurants and cafes.
Having caught the travel bug; and with being curious about new food, I came to the UK where I worked with many talented chefs at various venues throughout London and the surrounding counties. Events included some of the most prestigious livery halls, race courses and stadiums: The Royal Albert Hall, Royal Ascot, Henley and Lords Cricket Ground, to mention a few.
My travels then took me to back to New Zealand to Paratiho Lodge a Relaix & Chateaux Hotel, where I worked as the Executive Chef for a while until I was given an opportunity to visit a small, private island in the Maldives called Dhoni Mighili and head up a small team.
This was a very private affair that allowed me to focus on creating the perfect menu, using food which was flown in from around the world. From here my passion brought me back to London and start the next chapter in my life.
